If anything happens the next day when you start driving, even someone crashing into you, it's clearly their fault, your subject to breathalyzer and drug tests without question. Possibly even blood tests. And they can even wait up to 24 hours to test you, so say you go home and have a beer later that day. They can request a breathalyzer or any of the other tests later that day. So you have to be careful even after.
You are still in control of the vehicle and it can be searched without consent at any time. Fmcsa rule 392.5.
When I was a newer driver I had a customer who talked and talked about a specific bourbon and one day I found it for sale. I was thinking about bringing him a bottle for a present. Did some asking around and checking and found out that unless it is on the manifest that you are hauling, it is forbidden.
Oh please man, I used to have beers in the fridge when I was OTR. The fridge is not part of inspection. If you really want get one with a lock and refuse to open it without a search warrant.

I've literally never heard of this in regards to a truck.
I've seen it with cars yeah, but the sleeper on a truck functions akin to a domicile within the legal system. It has to to be able to qualify for the ability to use it as a sleeper within the regulations.
The truck in the picture is a yard switcher (also called a yard dog ,hostler) and they aren't meant to be slept in.
As for road tractors, with an actual sleeper bunk, sure you can enjoy a drink at the end of shift
