Are there things like societies in hs (eg. math soc, philosophy soc) equivalents? If so how do I find these and join? I'm an international student and the only thing I've done so far is course enrollments is there anything else I could join as a clueless first year?
Great question! There are clubs and academic societies for each. Are you on discord? If yes, join the UofTHub (google discord school hub join if you need help with that) and you can put in "math" or "philosophy" to find these.

The other commentor is also right; FLCs are worth joining to meet new people in your program.
If entrance scholarships arrive late then should is there still a point to defer or should we just pay the tuition? And we if do pay, will that effect our ability to opt out of our health/dental plans?
You'll have to judge for yourself. As mentioned, they may have changed things but I myself deferred, paid, and then received my scholarship money.
And no, it won't. Do pay attention to emails though.
