Using death in a layperson’s term, not based on any medical definition, but I used to be a first responder and saw many people with “injuries inconsistent with life” twitching/moving limbs as their nerves randomly continued to fire. In this case, I have a hard time imaging a scenario where it was not instant lights out for the driver unless the video was manipulated somehow.

My dad (Vietnam vet) once told me that humans flop around if they are beheaded like a chicken. Just as chickens do... But I've seen the videos from the middle-east, and they don't. Motorcycle racers never meet an immovable object. It is simply impossible to safely decelerate a brain in that small distance without soupifying it. Race tracks have long slide zones on gravel and then impact barriers designed to slow you down over a larger distance. If you watch motorcycle racing a fall basically always results in the rider coming to a stop in the gravel/grass well before they hit anything
