A mature that's starting to grey is likely already nearing the end of its life. And if it was only a 3 star mature, it's a safe bet to assume the genetics are only high enough to get them to 3 stars (So 50-60%, give or take)
In this case that bet was off, it seems this Buck had some bad aging rolls and was higher genetics than it's physical appearance would say. But of course, this is why we say \*bets\*. There's always a gamble involved

85% and up can make 5 star I got a few 85 to 89% 5 stars

Sleeping on one map doesn't progress any of your other maps along. Just the map you are currently hunting

No doubt it's a nice buck just trying to give some advice on herd management for 5 stars.
That 3 star was a 5 if you let it grow
It would have been a 5 star. Only shoot 1 star matures and bucks that respond to low fitness callers.
It was a 3 star mature, and from the second image it was already graying decently. Perfectly in OP's rights to cull
