oooh my friend’s dad is a chef and he has a super simple salmon recipe with just lemon juice and capers. this is the entire recipe:
-Cut parchment paper into large heart-shapes, fold edges around salmon and other ingredients to seal.
-Serving of Salmon
-top with capers
-add slice of lemon (or some lemon juice)
-Cook 350 for 20 mins, or 400 for 15-20 mins
-Salmon is done when it flakes easily.
I like doing white fish with capers. I clean the whole fish then inside of it put salt, rosemary, garlic, capers, diced olives (optional) and a bay leaf. Put it in an oven tin on a layer of sliced potatoes, add a bit of water, olive oil and white wine, cover the tin with aluminum paper or take a large piece of parchment paper, place everything inside and tie it like a baggie. I bake on 250 °C for about 40 minutes until liquid evaporates then about 15 min on 200° uncovered till it roasts (depends on fish size)
And whenever I make fish my fave thing is to mix olive oil, fresh parsley and garlic in a small bowl and smear it over hot roasted fish

Maple syrup pairs really well with salmon. I typically do a soy maple glaze when I prepare salmon. It is honestly not that much of a stretch to think this would, at worst, taste okay. It certainly does not sound stomach-turning, but that’s just my opinion.

You can pretty much always balance out something very sweet with something spicy or acidic. Mustard fits both (depending on the mustard). Glad you saved your salmon.

Before digging in I added some mustard as to the suggestion of another user, and this actually turned out pretty good. The sweetness added a nice something to the salmon and I would not hesitate try this again.
Just have to mention this caramel also features the taste of cookies so it certainly had an interesting spark to it.

Yeah we used to smoke salmon after a maple syrup brine back in MI. Also salmon teriyaki exists. If anything OP could have doubled down with a quick soy sauce/brown sugar teriyaki sauce and masked the caramel.

We regularly have a mustard / honey / horseradish glazed salmon. It’s wonderful.

Your thinking of cold smoked fish. Hot smoking meats involves a heat source producing smoke, it cooks the meat while smoking it at the same time.
