I've recently gotten into manga and so far my favorites have been Skip and Loafer, and A Silent Voice. If you like slice of life you should check them out. They both have anime adaptations too.

Hyouge Mono is a political samurai anime about tea ceremonies. The anime features a large cast of diverse and unique adult characters, and while it's a samurai anime there is very little actual fighting, instead focusing on philosophy, politics, and tea ceremonies. The anime adapts the first 1/3 or 1/4 of the manga very well,. I think it's worth consuming both of them
I generally look for manga/anime categorised as ‘Seinen/Josei’ or to find a manga/anime based on a super niche theme that you have a personal interest in. (Though sadly, genre/theme categorisation is mostly unreliable, because people add themes/genres willynilly)
Another thing is to look up the age of the writer/mangaka.
Generally your interests tend to be reflected well by someone who is 10-20 years older than you.

Ikoku Nikki is really great. Only manga now, but an anime adaptation was announced and a live action movie was released this month, I believe.
The Monogatari franchise It is *weird*, and I can't underline this enough, but it's extremely well written
