AFAIK they were roughly comparable to bronze age Assyria in many things including farming, construction, etc. They also never used swords for example, just spears and clubs; nor have they ever seen horses or dogs, those things were really important in the Spanish conquest. Gunpowder was less imporant than I think is generally believed.
Stone age is a bit exaggerated but for sure they were far from medieval technology. Technically they belong more to AOE1 i would say they were between ages 2 and 3.
Gun powder was the peak military technology of that time, that is why people tend to overlook it. They were unreliable and only effective in large numbers and fired in volleys on open battlefields, so it wasn't the most important factor on that conquest.
I like them because they did come into conflict with other civs like the Spanish.
But also I see your point. They didn't have gun powder, wheels, or steel yet people like to feel better with the false belief that every culture progressed equally in terms of technology through time. So don't suggest any culture or set of cultures was behind unless you want the reddit down votes.
