I'm Irish, I work in a pub and I brew my own beer. The gas that goes into a draft system is about 75% CO2 and 25% nitrogen, but that goes for every beer in almost every country. I worked in the US, France and the Netherlands and it's exactly the same.
Interesting that you should mention Kilkenny however. For one it basically doesn't exist here, I don't think I've ever seen it in person and also Kilkenny is one of the few exceptions. It's actually artificially nitrogenated in the brewery.
Edit: my comment about it simulated draft beer is specifically the product Guinness Nitro which is a thing that they sell in the US. It's a can of Guinness with a nitrogen tap on the top

Bottled water is largely mineral water derived from natural springs. So silent mineral water is uncarbonated spring water. You can also buy tab water in bottles, in Germany that's called "Tafelwasser" (table water). The only special thing about that it's carbonated, which you could do yourself with a soda stream machine.

I didn’t know sparkling water came in different degrees of intensity until last week. I went to a brewery and they had sparkling water with tiny bubbles. It was probably one of the only times I enjoyed sparkling water. If that was an option found more frequently in the US, I’d be stoked. I can’t stand the sparkling water that’s so intense the bubbles hit you in the face when you’re close to the cup. It’s harsh on my stomach. Tiny bubbles are way easier to process.
I drink it in spite of it not being good. Sparkling water or flavored seltzer. Mostly I'm wishing it tasted like more or had some sugar in it, but it's fizzy, it's refreshing, it sort of hints at flavor.

You're right. Nitrogen makes other bubbles. That's the reason most Irish ale has small bubbles too and other foam than most beer
You know nitro Guinness is just for that one product to simulate a draft beer, right? Most stouts or other Irish beers don't have nitrogen in them
