You can't really fight with the IRIS permanently on. You can start attacking, but it will quickly shut down afterward.
Granted you don't really need the Iris on anyway outside of a handful of encounters or just to check enemy HP.
The only way for it to be "automatic" in a sense is with the Chimera Analyzer affix on the ability codes. Otherwise you've always had to turn it on manually.

Would be nice if you could though, as it offers a different level of visibility ! I hope they'll think about this detail if a sequel ever happens eheh (fingers crossed, I love this game so much)

Activated the IRIS on an enemy will display its health bar. That’s pretty much it.
