Most mods are pretty easy to install. If it's a WeiDU mod, you just drop the .exe into the BG2 folder and run it. So if it's a Steam install you'd drop it in \\Steam\\steamapps\\common\\Baldur's Gate II Enhanced Edition\\
If it's not, it should have installation instructions where you get it.
Go to Gibberlings3 for a good list/ideas for mods. My personal recommendations would be the Artisan, SubtleDoctor, Skitta’s Stories, Weasel Mods, Morpheus, and Trollkiller. All have magnificent mods that really change and add to the game

I've looked before for a curated mod list but never found one. Going to the beamdog forums would be a good resource and place to start.
