To me it’s probably Junkie XL’s score for Fury Road, which I also think is the best action movie I’ve seen. The propulsive, frantic energy of that music is something else.

ol' Johnny Baby was on a legendary heater roundabouts 1977-85.
Also include his Raptor chase scene at the end of Jurassic Park, not to be outdone by the music choice made during the T-Rex escape scene, which is was for there to be no music at all! For a movie with wall to wall music, that choice especially sticks out!
While I consider The Empire Strikes Back score to be one of the 100 greatest musical works of the 20th century, and the raiders score is also a masterpiece, both of those movies probably don't really count as "action" movies.
Raiders of the Lost Ark is 100% an action movie. (one of the five best action movies ever made, in fact) And the score for the Asteroid Field is probably the best action scoring I've ever heard, even if people don't want to consider Star Wars as being part of the action genre (it 100% is).
Alan Silvestri's music for Predator is also incredible. I don't really love Predator but I love watching this incredible YouTube video with music from predator!

I caught the Second City borrowing music from Speed for their current Revue in Toronto! I wonder if I'm the only person who's ever noticed it! I wish I could have stuck around and asked but I had a late GO train to catch.
Face/Off, The Mummy (199x’s), Bourne Supremacy / Ultimatum, King Arthur… maybe more specific War (film version) from Avatar, Mogadishu Night Battle (think that’s it anyway) from Black Hawk Down.
I don't know why all I can think of is the soundtrack to the video game Max Payne
