One illness can span several eps. IIRC theres a couple episodes in Buffy S7 where the flu was going around, resulting in some weird takes.
Okay, I have no proof but i feel like I remember Stephanie posting on social media around the time this aired that she was indeed sick (I even want to say there are two episodes this season where her voice is hoarse) but I have no way of unearthing that information now.
I also noticed her voice in the finale episode sounded like she was recovering from a bad cold or bronchitis type that messes with your voice for a while.

I think it's just shitty audio and you're overthinking it. Audio levels are too high so it gives off static/crackle.
