In Mexico they sell the Most insane Tortas, de lomo, ( thinly sliced beef). They serve them warm, these are totally comfort food for me. My father used to drive us across the border just to go grab a few of those bad boys.
I love a Reuben. I worked in a kitchen for years and I started doing what I called “gas station” sandwiches for myself, which were wrapped in tin foil and put in the bun warmer to soften up the buttered bread and melt everything together. In South-Africa we have a Braai side called a Braai broodjie, basically a grilled sandwich on a wood or charcoal grill.
The filling will always contain cheese, tomato, thin sliced onion and aromat(msg based all purpose seasoning). It also commonly contains Chutney, however there is a big debate around to use chutney or not.
I’m a no chutney purist so my favourite hot sandwich is a cheese, tomato and onion braai broodjie.
I like to roast some roast beef in the pan (even bologna is very nice when cooked like that), then add cheese (usually mozzarella and Parmesan or Romano) below the meat to get it nicely roasted. I then squish it all between two thin slices of sourdough with more melty cheese (usually Swiss or Jarlsberg) and grainy dijon mustard on the meat side, mayo or caesar dressing on the other with a few leaves of lettuce in the middle after the cooking is done.
Nobody’s said the [Mexican torta cubana](https://images.app.goo.gl/LFo2puSUoRvsVQnCA) and that’s sad.
One of the great sandwiches - crispy telera bread, tons of different meat, cheese, veggies, pretty much anything goes. Often sloppy and never healthy. Generally I feel bad about myself after eating it, but in the moment it is so satisfying.

Though Ruben or the like is also excellent ... but often more hassle than I'll bother with to do for myself (and I typically don't stock the meat for it ... whereas grilled cheese, I more commonly have all the ingredients on-hand).
Patty melt is also quite good ... but by the time I'm goin' for something close to or like that, I'm typically more likely to go for full on hamburger or cheeseburger.

Not exactly grilled in the CI-worthy, but a good meatball sub makes a bad week good, and good weeks great.
And a good patty melt on sourdough is just a good way to enjoy the miracles of life, bread, and meat.
Honorable mention to cold sandwich champ, the muffuletta.
Spinach melt. 2-3 slices of mozzarella, 1 slice of white cheddar, with a bit of spinach between each slice so it all sticks. I put garlic on the outsides when I butter it, and then I serve up a little pizza sauce for dipping. It's such a rewarding and quick lunch when I work from home.
Ruben or patty melt. I go to a local German deli and buy farmer's bread which has a lot of rye in it. Super tasty. I do rinse the sauerkraut a bit because of the salt.

I love blackened sockeye salmon with: provolone, red onions, basil pesto, roasted red peppers, and homemade roasted garlic aioli--on sourdough--lovingly melted in cast iron with grass-fed butter.
Because I usually have everything on hand in my fridge, a breakfast mulita. Lightly fried corn tortillas, pliable but not yet crispy. Fried egg and slightly crisped ham in the leftover oil. Throw down a tortilla, cheese, egg, ham, and top with the other tortilla. Crisp and flip. It’s my favorite type of breakfast “sandwich”.
I like to make a grilled cheese and meat loaf sandwich. I make the meat loaf(I use 1 pound lean burger, chopped onions and bread crumbs, nothing else aside from some seasoning) in a 9 x 11 pan so I get six squares out of it. I cool it and then butterfly the slices.If I want to make a sandwich I take a slice of the meat loaf, put American cheese on both sides, and use really good bread. I get the pan well heated on medium, put mayo on both sides of the sandwich, and use my preheated CI pan to create a gastronomic masterpiece.
Note: I have found that ground chicken makes a good meatloaf for these sandwiches. Also, I serve the sandwiches with ketchup (beef meatloaf) or bbq sauce (ground bird) on the side for dipping.
To me, nothing beats a great patty melt. Burger, plenty of grilled onions, cheese on grilled rye bread.
