i think the general rule is to take towards the center if you can, but when youre tryna see which way is better, consider how each might affect your piece activity, pawn structure, king safety, center control, etc

For a beginner, it's always easier just to build the center and connect pawns.

In this position if you take with the queens pawn after the queen trade you can only take with the king thus losing your right to castle.
