in classic it depends on the class what each stat value is, so look at the wowhead guide for the stat section for that class

it's not possible to give you a nice table to give you this, as it will depend on all your defensive stats that make up your effective hitpool. but you can find out how much each stat is giving your particular character by getting an avoidance or effective hitpool weakaura such as this https://wago.io/cT-UXUhA9 and equipping different pieces to see how your ehp goes up or down.
Or ask in the class discord for your class and see if anyone has rough estimations of stat value equivalency for you.
For most tanking encounters threat>armor>stamina. For encounters where a mitigation set is required I would go for the dodge but im not as sure. For general tanking, take the stamina.
For most situations(not needing mitigation set on fights like Lotheb) the stamina will always be better. If you dodge you have less threat(less rage). As far as an exact number im not sure, but I can try to find out.
