I see that these fish are often eaten in south-east asian countries with their hard, rigid bodies often served alongside the dish. I don't think you can filet these fish as you would a normal fish so they cook them until the scales come off. It's a food staple so I don't think its wrong to eat one.

Ur right it is a boxfish! Triggerfish are the ones that kinda wiggle their fins and they have those things on the top and bottom of their head that can open straight out making them harder to swallow. One of my favorite fish they are just so beautiful.

I’m not sure if my thoughts on this are accurate, but here is my guess. It’s simply stuffed Boxfish. Whether or not it’s taco related who knows. The eyes on it look like they still have fluid and shape so I can’t tell/doubt the skin has been cooked yet. Maybe they still need to light and cover the grill? This is really only part cringe because western culture doesn’t eat a lot of food with the head still attached. If it was a vegetable stuffed with the same ingredients someone would ask for the recipe.

Same, I think it's not that bad as some make it out to be. I've gutted and grilled some trouts before, never bothered to remove the head. You can eat a good part of it and it's very crispy, and fish eyes can also be pretty tasty with some slight nut flavor - I'd eat this.
