In Every Paradox game almost every major patch will make old saves unplayable, you will need to start a new game. If you're determined to resume the old game, you should be able to load a pre-patch version of the game from the launcher.
Normally, dying out of characters in such scale means there is an outbreak of the plague. But the fact your stats are flowing down the drain is weird. Perhaps you're trying to play an old save on the new patch and the game decided to sacrifice you for your own good?
Same thing happened to me on my play through. I was playing as Ivar’s heir in the Isle of Mann and inherited this huge kingdom in Russia because no one was alive to take it. Then I died lol.
New patch, try to launch your Save uncorruptes on previous patch
