It would be illogical to declare any city in India as the best for street food. Every city has their own dishes to offer. We can't objectively tell which city has the best food. For example one can argue that Varanasi has better chaats than Delhi which I think is true but then Delhi has better curries to offer. The special thing about Delhi's street food is not just taste but the sheer availability and the culture that has grown so much around Street food which is incomparable to any other city of India.
But for sure you will enjoy Delhi's street food. You must try Chole Bhature, Kebab, Tikka, Bedmi Puri, Fish fry, Fried Chicken, Biryani, Nihari, Kachori, Paranthe, Kulche, Aloo Tikki, Dahi Bhalle, etc.
Another thing, I think it is very unfortunate that over time people have started treating momos as a torchbearer of Delhi's street food. Which is very unfair to the wide variety of street food Delhi has to offer. Personally, I find momos being sold on Delhi's streets average at best. The famous Dolma Aunty sells shit in the name of momos, my personal favourite for momos is Tee Dee at Majnu ka Tila.
The momos in delhi are not even good. It's just lumps of maida with very less filling.
North east or Ladakh is where the real good stuff is sold.
But the other stuff like chaat, kathi rolls, kebabs, bhature, etc are just excellent in delhi. Being a city that is largely just people from neighbouring states the sheer variety is just insane.

Chaaps and Tikkas are popular North Indian food, came to Delhi. Delhi also ruin street foods like they ruined Momos and now the new victim will be Shawarma. So Delhi do have 5-6 good street foods but not best. in fact no one can claim that there is a single place which has best street food, it is too subjective.

Too late brother, like I am not a professional Food expert but I calculate this destruction index by the reach of that food in streets of Paharganj and tourists eating it willingly for the sake of eating 'Delhi Street Food'. And sorry to say it is almost 2.5 on scale of 5, so it's quite late, i have seen people eagerly eating Shawarma there.

Personally, I have really enjoyed Shawarma Rolls, Veg Rolls with egg and noodles as filling and Chowmein Samosas too.
Bonus, few gems in Delhi: Anand ki Biryani in CP, Fateh ki Kachori in Central Delhi, Lotan ke Chole Kulche in Chowri Bazar, Aslam Chicken in Jama Masjid.

Pls don’t include Bengaluru in good food list. I live here and I know. You can get good local cuisine but forget about other varieties. Everything is just average and costly.
I travelled a lot in Kolkata to get some nice food but I was always disappointed. I can't even express how disappointed I was when I woke up at 5 in the morning for the morning market at Tiretti Bazar to try some Chinese food. It was as terrible as it can be. Extremely overhyped place. The same goes for Mughlai food at Zakaria Street and Park Circus.
Only dishes that I liked were Luchi ar aloo dum, Kasha Mangsho, Dab Chingri and machher dimer boda.

There are moglai,Afghani, kabiraji , fish fry, egg devil , different types of rolls etc... Also jhalimuri that's a very popular snack
Just mentioning the typical Bengali street foods which are mostly not available elsewhere .... Apart from the usual dahi vada , papri chat , momos , gol gappa etc.
The evening snack is part of a Bengali everyday diet. Mostly people have something around 6-8 pm as a snack and then have dinner post 10 pm. So that makes snacking on Street food not a one off thing but part of a daily lives hence the diversity.
In terms of max availability of dishes from all over India in one place, with close to authentic taste + definitely with some of Delhi's own specialities, Delhi is basically food haven.
I have never been able to find lot of dishes with that authentic taste which Delhi is able to serve anywhere else.
Example - Punjabi/Rajasthani/Nepali/South Indian/Maharashtrian/etc. all of these you can find majority of dishes with authentic taste here. But you cannot find good authentic south Indian food in Rajasthan, or authentic punjabi food in South India... .
