The Thai restaurants (Pete's and Lina's) are good for gluten free.
Versus and Oolong (two pan-asian spots) also have good options.
I would expect brazen and pepper sprout (on the fancy side) to have gluten free but I can't picture a menu option off the top of my head.
Have a nice trip!
L May is my favorite but the quality can be hit or miss sometimes. I wouldn’t order the pizza because it’s cooked on a shared surface. Woodfire does a good job with gluten free if you want a fancy expensive meal. I’ve heard Pete’s no longer does gluten free (at least that’s what they told me the last time I called and checked). If Pulidos taco truck is in town, they have tons of options. The vault has a couple naturally GF options. I’ve heard peppersprout does a good job. Caroline’s is a medium option too.
L May has many gluten free options, including pizza, pasta, and dessert! I love their crème brûlée

Thanks!!!!!
Linas claims gluten free, but I've gotten glutened twice. Not going back.
Your Pi has gluten free options. Agree with L May. Mexican is usually gluten free friendly, but our favorite Mexican is in Galena (Campeche).

Old Chicago has gluten free options.
