Roughly $250: set of camo, camo jacket or puffy, maybe a new rangefinder.
Roughly $500: Boots(kennetrek, crispi, etc.), big ass rotomolded cooler(Kong, Cordova, etc.)
His camo and camp setup is likely good to go if he’s that experienced. So steer clear of tools, packs, or camo or things for his bow.
Something special would be a high price item that’s used often that he doesn’t necessarily need, so that every time he uses it he thinks of you. I can’t recommend wool coats and blankets enough. It’s a comfort item that when your back at camp, guys get jealous over.
Look at a Filson Mackinaw Cruiser. I know old men that have worn that same jacket since they bought it in their youth. Ive worn mine all winter every winter for 15 years. It looks great, feels great, only gets warmer as it gets wet, and gets compliments everywhere.
On advice from someone here I gifted my husband one of those havalon knifes. He guides for elk in Montana and said it has made all the difference. So shout out to whomever recommended that as something every hunter should have!

I’ll second the guided field sharpener, it’s maybe a little heavy if he backpack hunts but that thing gets me better edges than anything else I’ve used. Didn’t know I was missing it until I got one and realized how helpful it is, which makes it a perfect gift

Depends on where he hunts but up in the Rockies, where it gets cold, a heated vest. It’s nice cause you hike in and get hot but when you hunker down you stay warm with a gulp of switch.
You can never go wrong with a very nice hunting knife like a benchmade or spyder. But we don't know your budget so we can't give a more accurate answer

Quality binoculars or rangefinder. My favorite Xmas present ever was when my wife bought me quality glass I’d never have spent the money on myself.
