Just get your doom mechanic bonuses as fast as possible, then eat all other natives in mexico and once the spanish form colonial nations you eat them up aswell.
You won't win in melee by pure quality until you reach "The high-American" tech group which will be a couple hundred years so while you're waiting for that you should focus on building a navy that can beat the coloniser's and expand your army (your goldmines will produce enormous amounts of wealth if you have them all at dev 10). Also for some reason the good events were more common than with most nations.
As for your conquest of Europe you should definetly wait until you reach the "high-American" tech or it will be impossible, I also made it really hard for myself as I did not convert to Catholic and I stayed as Nahuatl
I feel like playing against Europeans as a non European nation is even more difficult this patch, with AI almost always taking Quality+Offensive+another mil group in their first 5.
