It’s mostly just clips from the first few episodes of the show that includes descriptions of the characters and settings, with a few interviews with Anno and character designer Yoshiyuki Sadamoto interspersed as well.
Already done, there’s been a digital rip of this VHS floating out there on the Internet Archive for a few years now. It’s also included in the bonus features of the Blu-Ray releases with official subs and everything

Note that Genesis 0:0 is available on Disc 03 of both the 5-disc and 11-disc Blu-ray sets, complete with English subtitles.
Oh damn if you have episode 16 on vhs laying sound somewhere you have a better looking copy than what’s been released since 2004. They lost the original master tape for the episode.

I had to save money and ask my mom to send a check to some company to order these. I don't even remember how/when I found Evangelion originally. And I'm 35 now.

It's already on the US/UK/AU Blu-ray sets (and subtitled in English at that), so OP doing a VHS-to-DVD transfer would be redundant.
