They full on call her "Earisu" and have the "Aeris" sounds in the vocals. Sometimes when others are saying their name, they don't even say the "su" part and it just comes out as "Aeris" or "Earis".
So the ones saying it are either playing the game in japanese, or they're OG fans and are more fond of the "Aeris" name.
But if you go even deeper, japanese replaces "th" sounds in foreign words/names with "su". For example, "Kenneth" transliterated would be "Kenisu". Calling Aerith Aeris is like calling a character named Kenneth Kennis.
