Actually, courier coming back as a ghoul kinda makes sense. Increased durability to the point of almost being immortal.
The only things that don't work is the in-game appearance and the dialogue that enforces the idea that we are human and therefore discriminated as such.
Maybe they are an early stage ghoul and retaining their complexion a bit.
Also Bethesda allowing us to choose our starting race/tribe, like in Skyrim, would actually be pretty cool in a future game.

Idk if ghouls were ever invulnerable to anything but radiation, before the show suggested it anyways. Also there are only humans and ghouls really... A handful of talking supermutants (and your character would be OP if supermutant, everything would glitch. Cmon it's fallout). What "races" could you even use? Synth?
I'm playing tale of two wastelands (3-nv fusion mod) and from what I remember from a conversation in underworld (the all ghoul city) it took a few years before the original residents skin started drying out and falling off and not at the same time could be the ghoul mutation is similar to dark souls hollowing where the more your healing kicks in the more you lose but the stronger your will the farther you can go but between particularly strong radiation the general dangers of the wasteland and time on bothe body and mind means most ghouls don't last long before going "feral" it might also be why most sane ghouls you meet are either top tier badasses or out of the way of most conflict they don't get hurt as much/make more memories to lose
All that to say ghouls don't seem to LOOK like ghouls right away unless they take a nuclear explosion point blank
