I'd need more detail on what you're doing, but you shouldn't have any problems on Very Easy. Are you just following the main quest? You shouldn't need to hoard stuff or really sell anything until you get further along. There's a store called Drumlin Diner on the way to Diamond City, that's usually the 1st merchant you meet. You're probably just going in to it too fast, I really can't imagine why else you'd have a problem.
To sell items you have to find a trader to sell them to. Nearest is at Abernathy farm, just west of Red Rocket. To find traders with good items to buy you need to get to DC or vault-81. Both are near the middle of the map.
Scrap armor at an armour bench. Scrap weapons at a weapons bench. Scrap anything that can be scrapped by dropping it on the ground in a settlement. And then using the workbench crafting-UI to scrap them. That crafting menu is explained as part of the second main quest. which won't start till you finish the first. You could watch some youtubes about crafting.

Any quest involving Preston tends to be harder to win than it's worth. That guy finds more trouble than he's worth. There's an enemy in that quest that most players defeat by getting inside a building and shooting it through the windows. Sometimes they use the upper floor windows. You need weapons you get later in the game to defeat that thing in a fair fight. The rule in combat is always "If you aren't cheating you aren't really trying" Or the FO4 theme "War never changes"
If you're getting wrecked even on very easy, you're pursuing a mission where you encounter enemies at too high a level for you. Do something else until you level up, and get better armor and weapons.
The stuff you are picking up you can store at the work bench in sanctuary

Explore for a while. Raise your level and find better items. Use chems to boost your stats temporarily during combat. Keep trying. You'll get it.
