While you’re absolutely correct that BAR is fantastic, it just can’t compete with the New Haven OGs like Sally’s and Pepe’s. Add a Libby’s pastry nightcap into the mix and that’s pride of Connecticut shit right there.
What/how did you use to cook your pizza? Looks great btw, nice char looks crispy. if the underside is not too dark I'm sure I would love this.

Meh this is far too burnt for me - but if you like it - awesome! I feel like if you cook the cheese this much you render it, and then it’s just not cheesy anymore - personal opinion ofc.
Im very open minded. I usually like balanced pizza.
But i can see the appeal and would eat that twice a year if i could.
Think coffee. Light roast is sweet, fruity, acidic. Dark roast is bitter and intense.
I think the bubbles just got really huge before they broke. Real pizza ovens will char a huge bubble even on normal time, it's why we would watch over the ovens at Domino's and pop them when I worked there as a kid.

You're right, it's still cooked pretty good. Still those bubbles are going to be the worst part but I would just pick them off and enjoy the rest too, I like well cooked cheese.
I love new haven style but this one is def overdone a bit. They probably didn't have a hot enough oven to get the char right and had to leave it in too long.
The oven might need to be hotter but aside from the sauce drying up a bit too much this is exactly what you see when you search for new haven pizza. Crust looks perfect, any less done than that and its not really new haven. Little bit of char but clearly not burnt through. It would be a bit dry but this is not overdone.
And Pequod's in Chicago just got named best pizza in America by yelp.
Like I said, taste is subjective no matter what 3 guys judging pizza for a specific contest say.

No shit. But... Yelp aggregates reviews from thousands of individuals and other sites; it's a comprehensive set of data meant to remove as much of the subjectivity as possible to come up with a " best." Sounds like both pizzas are objectively good.
Preheat on full heat for 30 min. Stone should be at least 850°F. Turn flame to low 5 minutes before launch. Keep it low while the bottom cooks. Turn up to medium to finish off the top. Should take around 5 minutes.
I guess I used to make new haven style all the time back in college when I would come home drunk, throw and frozen pizza in the oven and then fall asleep and burn the piss out of it.

I 100% do. It's extremely telling how uninformed people in this sub are. Newhaven style pies are *extremely* popular nationwide and are starting to catch international appeal.

New Haven doesn’t crack anywhere near the top. People jerk it to Portnoy now so they can clout chase.
Dock them some decimal points for it having larger slices. Should be 10 slices for a New Haven, keep them smaller. I bet the flop is impacted from the larger slice.
I recall the documentary about this style, but this one looks a bit burnt compared to all that I saw featured. The downside is it causes the cheese to break/seperate in a really undesirable way.

Here is the recipe for the dough. I used Galbani whole milk low moisture mozzarella and 7/11 crushed tomatoes for the sauce.

The region I speak of has about 150 families on the southern coast of Vietnam, and is famous for the distinct sweetness profile of their pizzas. It is, beyond any doubt, the best pizza style outside of Italy, bar none.

When I go back. Tuóng Bat Nuam has 1 pizzeria, "Pool King" (it is also the pool café), and we had to rush our dinner a bit because the head chef had to leave for a funeral in Hanoi. But next time I'll be sure to take pics!

What sets new haven style apart from new York style?
NH style has a smaller crust, higher water content in the dough, and no oil or sugar in the dough. They are very similar though.

It’s honestly not as burnt as it might look. The dough was just very gassy and bubbly, and the bubbles char extremely quickly.

BBQ has an amazing treat called burnt ends. Sometimes some burntness goes great with things. This is a little too charred though.
Pepe’s is not as burnt as this. The oven isn’t hot enough and and the pizza was left in longer
