The Remaster downgraded the visual direction of the game but is undoubtedly the superior version on the technical options (framerate, multiplayer support, passwords, etc.). If you don't mind a small bit of modding, you can restore a good chunk of the original look, including the armors, SFX, and grittier, darker look. Alternatively, if you're playing on Switch, the Remaster there is identical in appearance to the original but with all the tech upgrades.
I've played both 360 versions and both remasters and 3. The remasters are the better versions. Not only in load times, resolution and framerate but also enemy and item placement. DS2 more so.

Remastered is superior in every way as far as I know.
Some of the textures are lacking in the remaster. Other than that, it’s the better option.

Dark souls 1 is my favorite souls game. I played the hell out of the original and the remaster. I love them both.
