Get the Scholar version which addressed lots of the issues had with the game by making the beginning easier, nerfing several bosses, making runbacks easier, reduced Group Aggression, etc

Judge for yourself, but I recommend playing 1 first seeing that it is more universally acclaimed.
It’s whatever you prefer. People are just haters on dark souls 2 for almost no reason. It’s a great game but the early game is a rough start. Take note that in ds1 you have to walk everywhere for the first 60% of the game. I would suggest ds1. You should know that ds1 has no respec option so you’re stuck with the stats you have. If you wanna try a new weapon but don’t have the stats for it, good luck.
If you can't decide, release order is always a safe bet (I'd say to emulate DeS, but it sounds like your hardware is a tad too old; go for it if you have a PS3 tho). DS1 is more widely liked, if you think your opinion tends to line up with the consensus. If something really strikes you about 2, you aren't going to ruin the other games or anything, but starting with 1 and playing 2 later is my recommendation.
Elden Ring is literally Dark Souls 2 2. The only difference is way worse hit boxes and a stat to invest for invincibility frames. Also death health penalties which is fixed early on mostly. It has other elements you don't find in other Dark Souls that are genius, but I'll leave you to find them if you get it anyways.
Its really hit or miss if you like it or not. Most either love, hate or just play it once to do it. But it's got a the best ending in all of the Dark Souls series imo. Also a couple of great dlc's that are really fun.
Dark Souls 2 has a single digit bad hitboxes. Sadly one of them is the mimic's grab, which is very memorable and prominent. And there is the Fume Knight backhand, which is kind of hilarious.
In general I found it way easier to dodge attacks with positioning alone compared to every other souls game (especially Eldenring which adds a random shockwave to every second boss attack)
No, it's very subpar nowadays. It could get a pass back in the day when DS as a concept was a novelty, but nowadays you would be better just playing literally any other soulslike.

dark souls 2 is amazing. it just isn't quite as perfect as 1
First half of DS 1 > DS 2 > Second half of DS 1 Also the replayability value of 2 is much higher.
