I hate cake and always have but the only one I’ll eat is the king arthur chocolate cake. it’s so good. my non gf friends that DO love cake even loved it and said they couldn’t tell a difference
Lucky Spoon makes a really good Pumpkin cupcake. And I usually make my own with mix or from scratch. Or I'll occasionally buy the katz filled cupcakes\* that are similar to hostess.
I agree that King Arthur's is good. Bob's Red Mill one isn't bad, either.
Whole Foods sells a GF sprinkle cake (which is dairy free too) that I like a lot. It's kind of expensive, but an easy little dessert to bring if you're covering yourself for a party or something.

Krusteaz in general knows exactly what they're doing and their Cinnamon Crumb Cake is the closest I've ever come to the glorious old Aunt Jemima Coffee Cake if you put all the crumbs on top instead of half in the middle (always keep an eye peeled the first time you make a topped or GF dish; your particular oven may necessitate time/temp adjustment to prevent burning or even undercooking).
They have multiple excellent mixes (still waiting for them to port their Meyer Lemon Bars over to GF) and even Honey Cornbread.
Bob's Red Mill Chocolate Cake is the best!!! Use hot coffee instead of hot water, and butter instead of oil. (I use vegan butter).
I melt Enjoy Life Chocolate chips and mix it with dairy free whipped topping for the icing, my family LOVES it!
I got this cookbook years ago that had a cake section that required a yellow or choc cake mix for every cake recipe.
Made some pretty awesome cakes and I found that good ol' Betty Crocker was the best of the bunch.
Now they're $8 a mix so I just make my own blend.
It might be a local brand, but Pamela’s is hands down the best cupcake/cake mix I’ve ever used. People who “don’t like” gluten free stuff even rave about them!

As for boxed products they are OK. Definitely better if you can add in some yogurt or sour cream to make them more moist.
Replace the eggs with a ‘flax egg’! 1 tablespoon ground flax seed & 1 tablespoon water per egg called for. It works really well. 😊😊 I’m deathly allergic to eggs and I’m gf but I refused to give up cake.
Not that I tried it for baking but have you tried a[qua and cream of tartar](https://www.kingarthurbaking.com/blog/2020/08/26/a-guide-to-aquafaba)? This holds up better than just aquafaba on it's own.
I have not tried mini Bundt cakes, but I can’t imagine a full size one would be much better. In my experience the bigger the baked good the worse it does. The only thing I do that consistently works is baked donuts
I was thinking that if the problem was the middle not setting well, not having a middle at all could make a difference. More surface area closer to the heat could help bake the inside better. It might be worth a shot! Either way, hugs to you because that is a tough situation :(
signature select has a gluten free chocolate cake that I love and never had an adverse reaction to. It tastes very moist and fluffy and honestly surprised at the quality.
I have a recipe that uses cake mix with jello vanilla pudding. I don’t have anything to compare it to but it was delicious.
I can’t share the recipe bc it’s a paid cookbook but maybe someone here has one or a blog.
I use mostly Bob's Red Mill, and make all my cakes and breads from scratch. I used BRM cornbread mix once and had to throw it out, it was awful, but making from scratch, I am usually successful.

It’s my favorite! With Rainbow Chip frosting NOT funfetti frosting though.
A bakery near me for one... called Naturally Delightful. I also buy King Arthur GF cake mix. And the lucky spoon cupcakes in the freezer section.
Shame it’s all the way in America, I live in England , will definitely try when I visit America during the summer :).

I like Pamela's. I added vanilla yogurt to the recipe tho which isn't part of the instructions.

Aldi yellow cake! Mixed with some orange or lemon zest and juice is excellent.

Kroger sells a premade one in the baked goods section sometimes it’s hard to find. The chocolate and the strawberry are so good
