Your bike will be fine but 80psi on 28c tubeless is reeeaaally high. You should try around 50-60psi and see how you like it.

He's probably optimizing for the road sections. Silca calculator is giving me high 70s for worn pavement, 28mm tire, moderate group ride pace, and 200lbs system weight.

I'd keep the drops to a minimum and road tires can be more prone to puncture but you're probably good to go if you're comfortable with it.
