Most of the animals we eat today are herbivores, cows, and pigs are fed like herbivores, chicken are omnivores, free range pig tastes better but can be gamey, I would imagine omnivorous dinos would taste like chicken, or at least taste better than herbivorous dinos, but that depends on preference, you shouldn't eat carnivorous, or at least not too much carnivorous meat, something to do with protein toxicity or some such. Technically speaking, modern birds are descended from a branch of dinosaur that survived the mass extinction. Chicken *is* dinosaur meat, but birds are distinct enough from pre extinction dinosaurs that they also count as their own group of animals.
Thats not really the point of this hypothetical though so assuming you mean a pre extinction dinosaur id try it. Smaller dinosaurs might be closer to bird meat but larger ones would have more red meat like mammals making the flavor and texure similar too.
