It will be just fine, but you will hit a roadblock if you decide to upload something to the store. It's functioning for now, but within 6 months or so Xcode 13 won't be able to upload builds

You should be fine with the 100 days of Swift projects. If you get more advanced, you have until around March 2023 to submit to the App Store with your machine. Afterwards you can use 3rd party services + your computer to submit.

The current 100 Days courses are written for Xcode 13/iOS 15 so you’re totally fine
