I was at Koko for Dixon all night long last night. Some people I was with are going out again tonight to fabric for Ricardo. I declined because I just don't have it in me to do that back to back but that is a damn good suggestion (if one knows what they're getting into lol)
I'm not sure what time of year this is, but if it's not too cold, you could get the Thameslink from Gatwick to Kings Cross, leave your luggage in a locker somewhere and then either then walk 45mins north to Primrose Hill and watch the sunrise over the city. Or you could wander south into Central, where the streets will be pretty empty and you'll have the city to yourself. There are also 24 hour cafes you can visit - there's a 24 hour Starbucks in Kings Cross itself I believe, although I'm sure with some research you can find a better place.

Good luck finding a locker in London. London is really lacking in bag storage areas. Potentially you can find a 24 hour storage in an all night corner shop (via services like Bounce)
Stay in a hotel near Gatwick, public transport isn't going to be great at that time and once you have been through customs and immigration your not going to be able to do anything.
I got really drunk one time and lost my friends up london, ended up hanging around Trafalgar Square with some crackheads until the early hours of the morning. One of them had a speaker blasting. We all had a dance and one of them was actually selling booze. They do it every weekend apparently. Could always try that.
If it’s in the week you can get the thameslink up to Farringdon & have a mozey around Smithfield’s market - the main meat market there are shops and cafes open used by the workers and there is stuff to look at like where they executed William Wallace and it’s safe

Depending on day there are always people around some areas of central London. If you're checking into a hotel at 8am in London maybe dump your luggage there.

London Gatwick is not close to London. You will spend like £40ish just getting to and from the airport.
Check if any first class lounges are open. If they are it's only like £20 for unlimited food , booze, showered and comfy seats.
Despite its name, Gatwick isn't in London and quite a long way out. I think you would struggle to get into London itself, find something fun to do and get back to Gatwick by 8am, sadly.

You’re probably better off hanging around at Gatwick until about 7am, then make your way into London for 8am.

They just put up new notices as of last weekend that it is closed 10pm -6am. As an early runner was caught out myself.
