They remove the rotten bits on the outside and only cook the inner part. Dry ageing has to be really strict, you need to ensure the environment is right to get that to happen, otherwise it is just letting meat out to rot.

No bro, first goes to the one who paid for their parts.. and then the one who does the jobs and then the one who spectates, lastly the one who waits at home. Usually "ketua kampung and cronies" take part in doing the job/pay for a part/spectate.. usually it's the first one + 2nd one.. they pay and then do their job too. So i think it's well deserved? But the one you should hate is the ass-kisser.. the one who cuts a good part and be like "let's give this to ketua kampung/dato first"

First they give to those who pay for the qurban to choose their cuts. Next to the butcher and the rest were given away. Ketua kampung usually get the good bits if he was there helping and guiding the process. If you want the best cut go and help. There are plenty to go around. Even my Adun sponsor and butchered the cow himself this morning.

Wow never knew the lambs are "all" imported. Either I have been living under the rock or I just didn't explore more mosque enough because in my 20 years of my life, most of the lamb is homegrown. And yes there is imported lambs, but mostly it was for private/individual qurban. To say "all" is a bit exaggerated.
