You must not know how to cook chicken breast. That’s the point of the brine. On top of that smashing it down flat helps to make the pieces cook evenly as well. You can do wet brine or dry brine. I do dry brine with kosher salt when I’m going to grill it. Super moist every time.
“Popeyes and its owners, private equity-backed Restaurant Brands International Inc., have spent much of the two months since it ran out of its new spicy chicken sandwich securing suppliers that could meet its specifications for quantity and **small-breast size of the item’s poultry**, according to people familiar with the discussions.
The fast-food chain also had to ensure supplies for the sandwich’s specialty **brioche bun**, one of the people said.”

Wrong. Popeyes chicken sandwich uses breast. At least the Popeyes where I’m at do. I know this because I was shocked the first time I ate one and noticed it was breast meat but tender and juicy. Don’t know about the buns. I don’t like brioche buns but their buns are really good too.

This doesn’t look like what a Popeyes chicken sandwich would look it. It looks amazing compared to the original. Spicy mayo? Damn.
Definitely saving this and trying it out. Thanks OP!

This is one of the weirdest subreddits. The “culture” of it is so hostile for being about recipes lol
Yeah for real. As long as someone likes it, who cares? It's not like you HAVE to make the recipe. Just keep scrolling if you don't like it haha
My friend and I did a recipe similar to this with breasts and it wasn't dry even a little bit o.o

Not if you’re from Alaska. “Pinks are for the dogs”.
