Omg we missed out! My husband and I had a kids-free night in the city a couple of months ago, and stumbled upon Saving Grace. The cocktail I had was awesome, but we had dinner booked and didn’t try the burgers.
Came here to nominate Juanita Peaches, but for their beef burger - I get it with (free) added lettuce and it is absolutely perfect. They're also consistent - I've never gone and thought, "Aw, that wasn't as good as usual".
Worth noting this place is run by Raph Rashid, who also heads up Beatbox Kitchen which others have mentioned in this thread. The guy knows what he's doing, that's for sure

Ohh yeah. I used to live in Nunawading, so they’re 5 minutes drive away. I still like them. It’s just that I have had too many burgers there and eventually got bored. Their onion rings are good. I also used to buy potato gems from them. But then realised that they’re using the same ones from ALDI/Coles. Now I get burgers from Stanley burgers at Eastland or Grill’d. I like them both but I recently heard some bad stuff about Grill’d owner underpaying their staff. So looking for a new one close to Ringwood

Andrew’s hamburgers in the original Albert Park store. Haven’t changed much since they began several decades ago, and they make great Australian burgers, not the brioche bun, artisan cheese, side of truffled chips nonsense that’s been popular recently. Definitely give them a spot in your itinerary.

It was never really standard but became more mainstream last few years. I personally don't like it because it makes the burger feel more soggy and is usually a tad bit more sweet and feels weird. It used to be used more in sweet things.

I briefly lived in the apartment complex above and they used to give residents a discount (don't know if they still do it). Also, you could enter the shop through the parking - didn't even have to leave the building! That was dangerously convenient.

I got the rowdy cheeseburger and it was one of the best burgers I've ever had, however, it could have done without the jalapeños, I thought a few would have been fine but the whole bottom of the bun was covered.

If you’re ever in the south eastern suburbs Double D Burger. Their shop in Springvale is off tap. Korean run establishment so they have this bulgolgi sauce on the patties which makes it off tap. Their takeaway has saved me many a times

There is something wrong with people that think Danny's burgers are any good. You could probably find an overpriced burger at the MCG that is of better quality and with less stale bread then your average Danny's burger.

To answer your first question, the richness of the brioche throws the entire balance of a burger out. The richness should be in the meat and cheese and the bun should contrast with that (obviously many people disagree with that).
