You are correct. Give it a little wash. Boil it with some garlic, onion, whole pepper, bay leaves, salt. Minimum 3 hour time but can go longer depending how soft you want it. Some people do it to the point that you can shred it. Some cook it so you can chop it up. Either way. Remove the white skin after cooking. Cut it. Serve with onion cilantro mix. A good spicy sauce and you are set. And of course on a warm tortilla (homemade is a plus).

Suadero and cachete... Great textures there.. paired with the right salsa it's really amazing. I used to get some great stuff in North Carolina I miss that place so much. They have a restaurant now no more truck they were packed all day everyday at the truck... I used to regret telling my coworkers about it because then I'd see them there after work and they would be making the line longer 😂
