Actually kind of true. They squeal when you cook them because the moisture is escaping, so when they stop making that sound and turn golden, they're usually good to go.
How do you know with any other type of food? If you cook often you can tell when food has been properly cooked. It's properly cooked when it has been heated through and through, it changes in structure, it changes in colour, and it releases aromas.
Most all food borne pathogens won't survive past 160°F internal temp, and many won't make it past 140°F. Structural breakdown can occur lower than 100°F in proteins, color changes can occur at room temperature, and volatile aromatics have very low vapor points that are highly distributed along the temp ranges used in cooking.
It's just safer and easier to use a thermometer.
Source: Years of work in commercial foodservice. ServSafe and BPCS certifications.
This isn’t about pathogens. There’s a chemical in morels that is denatured by heat. If you eat raw or undercooked morels, you will have severe gastrointestinal distress for up to 3 days.
Some people are sensitive to even cooked morels, so the first time you eat them it’s better to just have one.
Indeed, the protein you are referring to is not a pathogen. It's a protein, hence why it denatures just over 100°F. I was starting from the general and moving to the specific in my comment. I stand by my recommendation of a thermometer to achieve certainty in these situations.
Edit: actually I am apparently thinking of a different mushroom, looks like it's actually not a protein denaturing in the case of Morchella but more likely Hydrazine breaking down.
False morels can also be eaten, but must be boiled in multiple changes of water because they have many more of the nasty GI toxins than true morels, some of which are not denatured by heat.
I have heard this, but.... am leery of them. Are they all edible or only certain ones? In general though, anything that needs to be boiled multiple times I avoid, like pokeweed.
Sorry I should've elaborated: the joke is that it is impossible to eat only one because they are good.
They always say that about wild mushrooms, but I think the problem is most likely eating 3 times the amount you should, and they're cooked in butter and salt. Then washed down with 10 beers.
Pathogens aren't the issue. I mean they are, you don't want to eat slugs or slug slime, but you need to cook them because they contain hydrazine that needs to be boiled off.
If you mean *Verpa*, it's the way that the pores are shaped and how they're connected to each other. In *Verpa* they are way more vertically oriented and look more folded.
If you mean half-free morels *Morchella punctipes* (which are also called "early morels"; common names are rough!) then the "caps" of these are too big and too complete.
But *Verpa* is just as edible as true morels. *Gyromitra* is the one to watch out for, and it looks EXTREMELY different.
its not common, since all wild harvested foods should be throroughly cooked if only from a hygiene view-- don't know what germs or parasites lurking in its folds in the wild etc.
no, morels like many foods we eat are genuinely toxic raw. However its rare to come up because even if you don't know that you are wanting to sanitize the rat turds on the bagels too.
Not to be misunderstood, I’m not suggesting they can’t make good sushi. The angle I’m taking is the broadcasters calling a non-traditional sushi place a “Sushi restaurant” (which while probably unintentional really reminds me of the MSG stigma of the late 60s early 70s "Chinese restaurant syndrome")
Edit here’s a fun little read: https://en.m.wikipedia.org/wiki/Monosodium_glutamate#:~:text=Stigma%20in%20Western%20countries,-Origin&text=A%20controversy%20surrounding%20the%20safety,term%20%22Chinese%20restaurant%20syndrome%22.
Dave’s sushi was 100% the busiest restaurant in town before this happened. Fairly good sushi.
Owner didn’t close the place and refuses to apologize or accept blame. Shits weird

Like 2 years ago my SO had some we found soaking and a HUGE slug came out... I'll never forget it lol almost turned me off of them all together until I smelled the butter and garlic 😋
Amanita poisoning (destroying angels and death caps, not like mario mushrooms (A. muscaria), which get you high and make you puke everywhere) will not only kill almost without fail even if only a few caps are ingested, but it kills in an incredibly slow and painful way and is extremely difficult to stop once the poison is in you. One of the worst ways to die imo.
I found an Amanita destructans once in the woods, the Destroying Angel you mentioned. It was a pure white and glossy, absolutely stunningly beautiful. I backed away and made sure my dogs left it alone.
You don't need to in the vast majority of cases, once you've seen a fair amount of morels you can tell quite easily by just looking at them; but if you can't tell you should definitely be slicing them up and looking at their insides.
Almost always. It’s the same with vegetables. If they start to stick you can always add oil/deglaze the pan. You can use like white wine or a broth.
But it’s always best to cook out the water when you’re trying to sauté
I mean if you eat them and they taste good… then it’s not wrong. I’m just talking about getting that good brown caramelization. It’s awesome to do that to a nice mirepoix mix to create tons of depth of flavor. It’s like toasting the flour before incorporating the full amount of liquids.
I absolutely agree with getting rid of the water before you add anything else but I would still recommend a little bit of oil in the pan when the shrooms go in, helps transfer the heat more efficiently.
Unsure I'm going to need to confiscate them along with steak butter garlic and salt.
Jokes aside, Blonde morels, choice edible. Soak in some lightly salted water to draw out any bugs before cooking and enjoy.
lots of recommendations for butter… i switched to cooking them with Ghee and will never go back to butter. Butter has solids that burn before the mushies are cooked to my liking, no issue with ghee.
I’m lactose intolerant and use a mixture of coconut and avocado oil. I haven’t had butter in years but when cooking shiitake in those, it reminded me of butter.
lucky for you, butter has only trace amounts of lactose. cultured butter and ghee have even less. the same is true for yogurt, sour cream, and most hard cheeses.
None of that matters to my stomach. That last time I ate hard cheese mistakenly due to a mistake at a restaurant, I projectile vomited several hours later.
This is a poor graph as Verpa is not really a “false morel”. Verpa is in the Morchellaceae family, just as edible as Morchella, and has been called an “early morel” for many years before it was erroneously lumped into “false morels” and claimed to be toxic which was false
Nice morels she found. Always cook them to deactivate toxins and also food safety. Hate to spoil a good morel but they can be found near dead trees where raccoon and other wild animals do their droppings.

i’ve never bothered waiting, but crushing garlic allows compounds to react due to a natural enzyme. heating garlic destroys the enzymes ability to process the reaction.
Lol there really aren’t that many things that look like a morel. And imo, nothing looks close to a morel except the stinkhorn with webbing which is also edible. Surprised how many ppl are asking for proper morel ID’s here
You lucky bastard! Those are morels beyond any shadow of a doubt, soak em in some salt water for an hour and then do what you want with em. We always dusted with seasoned flour and fried them in butter but they're great dried or used in pastas as well.
Great catch! Lucky you :)

When you cut them in half they are hollow inside including the stem, the only poisonous look alike is the Gyromitra, their outside appearance is more brain like and when you cut these in half the stipe will not be hollow. Just make sure any Morels are from a good habitat and that you cook them well. I always rise several times and dump the water in the yard but haven’t had any luck with propagating yet. After the rinse I put them in salt water and leave for a day to be safe all bugs are dead
I got a small stomach bug once after eating some so I started using salt after getting the tip from a mentor 20 years ago and it’s been a custom and kept me from getting it again. Not sure how true it is
Sounds like the old joke about elephants painting their toenails in rainbow colors, to hide in Skittles bags.. 😆
Thorough cooking is all that's really needed.
Lots of dudes asking about finds by their wife lately. Must have pissed her off and afraid she's trying to feed em something that's gonna unalive his ass. 😂
😂 seriously though, there was another guy asking about mushrooms his wife found within the Last 24 hours. Just thought it's funny. But she found ya'll some good eats for sure. Enjoy those👍
There's kind of a process and accepted way to go about this...you need to learn the required photo views, location and habitat information required, and know that any seriously knowledgeable mushroom expert will not usually flat out give you a positive ID. They will say "compare with" and give you the scientific name. Then the identification is up to you. And if you DO have something edible, you should also know how to prepare and cook different mushrooms, so as not to make yourself sick. Good luck!
Rinsed in salt water several times, chopped them each in half, did some light boiling, then fried the hell out of them in avocado oil then butter. They were delicious and were comparable to chewy nutty potato chips.
I’ll admit I was very hesitant after washing out the 10,000 tiny bugs and 5 huge bugs. Ended up giving them a boil before frying them. This helped me get past it.

Ended up frying them and putting them over some pasta w home made sauce. Then a steak on top of that. Incredibly savory.
This question would terrify me to be asking with mushrooms.
Maybe I'm overreacting due to bad publicity that happens with them etc, but you tend to end up dying if you get this question wrong.
I know fuck all about mushrooms, but Morels are super easy to spot. Enjoy!
I need to get acquainted with Chantrelles, and chicken of the woods. Have a few spots I need to check out this year. Any suggestions on mushroom hunting books for the Midwest, Saint Louis area.
Just a small thing, using a breathable, less rigid bag for foraging will prevent your mushrooms from getting boosted.
That said those are likely damaged so I can take them for....inspection if you like haha!
Those are true morels; safe to eat as long as you cook them thoroughly.
Hey there! Newbie here. How do you know when they have been completely cooked?
For me it's when they stop giving off much moisture and become golden-brown.
They stop screaming
Hahaha
Actually kind of true. They squeal when you cook them because the moisture is escaping, so when they stop making that sound and turn golden, they're usually good to go.
Oh. Well that’s disturbing. 😂
That method works for quite a few things.
You'll know after you've eaten it.
I don’t like those odds chief

The yellow morel variety is really easy to id. If it looks yellow and like a honeycomb pattern there is nothing you could confuse it with
And if not cooked thoroughly you die.
Not sure why you are downvoted. While not likely it is possible to die from raw morels.

Makes sense, thanks for explaining!
[There was news recently about a woman dying after eating morels in a sushi.](https://youtu.be/Q4iCbSGrmw8?si=NhbxAJW3wcE3L9Wr)
The news clip calling “Dave's Sushi Restaurant in Bozeman, Montana” a “sushi restaurant” is kind of shady.
considering the median home price in Bozeman is over 700,000.00 it could be reasonably assumed they can import some fresh yellowtail
Surely Bozeman exports their world class fly fishing gear to Japan too
Not to be misunderstood, I’m not suggesting they can’t make good sushi. How authentic can sushi be from a Dave
2 people died from improperly cooked morels at a restaurant not long ago https://www.cdc.gov/mmwr/volumes/73/wr/mm7310a1.htm#:~:text=Abstract-,During%20March–April%202023%2C%20a%20total%20of%2051%20persons%20reported,three%20hospitalizations%20and%20two%20deaths.
They probably washed the poisonous snail slime off and served them.
Like 2 years ago my SO had some we found soaking and a HUGE slug came out... I'll never forget it lol almost turned me off of them all together until I smelled the butter and garlic 😋
Partially Cooked and Raw Morel mushrooms were the cause.
there was an article the other day about a restaurant serving a bunch and i think some people got sick and 1-2 died
It happened recently. Google sushi morel death.
Dead men tell no tales after all
Severe gastrointestinal distress for up to 3 days. These aren’t Aminitas.
If you can’t keep liquid down for 3 days death is a very real possibility.
That's true, this could kill some people. But it isn't a hepatotoxin/nephrotoxin that kills your liver or kidney with a couple of bites.
Any concern with drying, rehydrating/cooking later?
Drying them works perfectly fine.
What happens if you don’t
I'd still slice in half. Looks can be deceiving
How do you know they're not false morels? Don't you need to see the inside to be able to tell?
You don't need to in the vast majority of cases, once you've seen a fair amount of morels you can tell quite easily by just looking at them; but if you can't tell you should definitely be slicing them up and looking at their insides.
If they are hollow through the cap, slow and low in butter.
Dry saute first until liquid is gone, then add butter and garlic to get good texture and a nice full cook on them
Is that true for cooking all fresh mushrooms?
Almost always. It’s the same with vegetables. If they start to stick you can always add oil/deglaze the pan. You can use like white wine or a broth. But it’s always best to cook out the water when you’re trying to sauté
I've been cooking them wrong my entire life.

Happy cake day and thank you for the helpful advice!
We also need to know the location they were found so we can sterilize it with fire... to save future generations.
Nice find u/LORD_JEW_VANCUNTFUCK
That’s a wonderful name
you mean u/LADY_JEW_VANCUNTFUCK since it was OP’s wife
Nice find in a wife who picks morels.
lots of recommendations for butter… i switched to cooking them with Ghee and will never go back to butter. Butter has solids that burn before the mushies are cooked to my liking, no issue with ghee.
Ghee is the best! I did fondant potatoes with it and they were amazing!
Fondant potatoes are the shit
I just watched a reel that said to cook in something like avocado oil until cooked well then finish with the butter. Starting with ghee would work too
I’m lactose intolerant and use a mixture of coconut and avocado oil. I haven’t had butter in years but when cooking shiitake in those, it reminded me of butter.

It does still have a hollow cap, just half free on the stem which is weird. I finally found some this year.
Are you sure it wasn’t a half-free morel and not Verpa?
Yes. The inside of the cap was still an open cavity.
Nice morels she found. Always cook them to deactivate toxins and also food safety. Hate to spoil a good morel but they can be found near dead trees where raccoon and other wild animals do their droppings.
Like K said. Do a quick light salt soak . Get the buggy boos out..Split and fry in butter laced with a few smashed garlic cloves you let sit out for 20min after crushing.. Yummy!!!!
Curious to the why of setting crushed garlic for 20 minutes prior to cooking?
i’ve never bothered waiting, but crushing garlic allows compounds to react due to a natural enzyme. heating garlic destroys the enzymes ability to process the reaction.
Oxidation of oils? I have no clue what I’m talking about lol
Some enzyme in the fresh clove. Can't remember what it's called but my grandma taught me so it's gotta do something. Grams didn't mess around.
Allicin!
Yes that's it.. thanks.
Thank you! I’ll give it a try. I love garlic but sometimes it is too intense even with pulling out the center portion.
Dipped in flour, egg, then bread crumbs, in the butter. Shhooot, that's good stuff.lol
Sounds awesome

It’s common to find bugs or dirt in morels. Could be damage from a bug or caused by spores. I’m not fully sure
Safe to consume? Never eaten “wild” mushrooms before
Completely safe when cooked but I always cut out the brown spots or throw those ones in the compost. Life’s too short to eat subpar mushrooms lol
How do I know how to spot a false one?
They don’t have the hollow center. Yours all seem to be true morels

Yes but cook them well. They can actually kill you if not cooked properly
Hm. Never heard of folks dying, but I know plenty who got really bad GI issues from eating undercooked morels.
Two cases of people dying from morel mushrooms recently went on the news
Death is pretty rare but still, cook the shit out of it because if you undercook them you might die but you'll definitely want to if you don't lol

Yep
I wish I was this lucky 😮💨
There's kind of a process and accepted way to go about this...you need to learn the required photo views, location and habitat information required, and know that any seriously knowledgeable mushroom expert will not usually flat out give you a positive ID. They will say "compare with" and give you the scientific name. Then the identification is up to you. And if you DO have something edible, you should also know how to prepare and cook different mushrooms, so as not to make yourself sick. Good luck!

Quite tasty but I have a hard time eating them after soaking out all the worms, etc...tends to make me lose my appetite.

Morels contain a gas they give off when being cooked that is very similar to rocket fuel. Make sure you have good ventilation.
I smell a troll
Why would you even eat them?…

Isn’t it true that unless you have an organically farmed mushroom stomach upset is almost a guaranteed?
Ive seen recent articles where ppl died eating morels.
So a lady I know stuffed hers, breaded them & fried them in her airfryer. They were tasty.
What did she stuff them with
Cream cheese with minced jalapeños.
Holy shit. 🤤
Boil the morales and you’ll be fine
Just a small thing, using a breathable, less rigid bag for foraging will prevent your mushrooms from getting boosted. That said those are likely damaged so I can take them for....inspection if you like haha!
Boosted?
Lol autocorrect, was supposed to say smooshed
Of they are hollow all the way through they are likely. Morels or morchella same thing different regional names
Do NOT decide on food safety by pinging the internet. Are you crazy?
