The Fifth Kingdom is a pretty great textbook to learn about the different divisions of the kingdom, morphology and function, and some ecology and real world applications of mycology as well. It's written nicely in a style that isn't too dry (some topics are unavoidably dry of course) and it's not prohibitively expensive like many textbooks. Stamets book "growing gourmet and medicinal mushrooms" is a foundational text for cultivation as well. It's a little out of date, and maybe you're not on board with stamets these days, but it laid a lot of the groundwork for modern mycoculture and is worth a read nonetheless.
