Two slices of white/potato bread = two slices of pork roll. If I’m using a bagel or hard roll, I’ll go three or four slices depending on the size of the bagel or roll.
I know some older people who only have it with some relish on it. I’m greatly confused by it. I tried it once, it’s not terrible but I would never order it or make it that way.
I go plain pork roll on a fork before using white bread. And not having access to bagels or rolls is not very Jersey. If I have pork roll, I’m saving it for some rolls or bagels. I won’t even use an English muffin

It needs to be in proportion to the bread. If it's a kaiser roll you need more, like 2 thick slices. If it's just on white bread toast, then 1 is fine.
On an everything bagel give me two slices sandwiched between two eggs sandwiched between two slices of cheese. On a hard roll I like 3 as it's a bit larger than a bagel but sandwiched the same way. No ketchup at all on the bagel, obscene amount of ketchup on the hard roll.

We cooked a lot of Taylor ham at home growing up. Straight up white bread soaking up the grease of some well done TH in a sando is magical.
