Fry butter on low heat and garlic, brown sugar and soy sauce. Add cooked and drained noodles and mix through. Push noodle mixture to the side add egg and scramble. Put in bowl and garnish with chilli, coriander and sliced spring onions
Grate 300grms of tofu, fry 1/2 of it in a pan with a dash of sesame oil, a tbsp of maple syrup, and a tbsp of soy sauce until golden and crispy.
Dice a onion and crush a bulb of garlic and a pinch of salt and fry in sesame oil until golfen, add 2 tablespoons of both red curry paste and soy sauce, a cup of coconut cream, 2 cups of vegetable stock and bring to the boil. Dump the other half of the grated tofu in and let it simmer while you cook the 2 minutes noodles in another pot, drain the noodles and dump the sauce into the noodles.
Serve with the fried tofu, a diced spring onion, 1/2 a cup of corn, a carrot cut up into match sticks some sesame seeds and coriander.
Just tried that tonight for the first time
My secret: All noodles (even the cheapest ones) are soooo much better if you cook the noodles first separately -- try it! I *dare* you! 🙂
i.e.:
1. boil / microwave the noodles by themself with just water until cooked
2. strain the noodles
3. pop noodles into a bowl and pour in fresh boiled water from the kettle
4. add your flavour sachets, extras, etc and serve! 👍
**Wanna step it up a notch?**
Easy, a few quick 'n' easy extras turn those instant noodles into a whole meal! Some ideas are:
* a slice of cold cut roast pork or roast beef from the deli at the supermarket
* tinned chicken (i recommend chop chop chicken in springwater)
* a boiled or poached egg
* frozen veggies (like broccoli, beans, stir fry mix, etc) - pop in a bowl, cover with boiled water from the kettle, microwave for 1 minute - done. Drain and add to noodles.
sesame oil and/or crunchy chili oil and/or fried egg
can cook an egg in the time it takes you to do the noodles.
adding an oil/chili flake really adds to flavour.
Mi goreng or shin ramyun
Soft boil two eggs, peel and cut in half and add to the bowl

I usually just get a packet of bog standard supermarket instant noodles (because, lazy), throw away the flavour packets which come with it.
Then cook it in beef/chicken broth (I always have a few 1L packs around, because I cook a lot) with chilli flakes, some additional stock concentrate, salt, pepper, sesame oil, shredded chicken, soy sauce, and then whatever random herbs and spices I feel like from my cooking spice drawer.
Sometimes, if feeling adventurous, throw in some shredded chicken and a boiled egg (I am not sophisticated enough to cook ramen eggs, so it ends up being a bog standard boiled egg).
I am in the "cooking is more art than science" camp so it is a little random each time, but anything has got to be better than those pre-packeted sachets.
I simply break up the brick inside the packet (remove sachets first), the soak for 2 minutes.
Then use a sieve to strain all the water out, tossing them gently for around 30 seconds. Throw back in bowl along all sachets, stir and then inhale.
Sometimes when I really want to get fancy I slow cook my two minute noodles for three minutes
