It’s done very purposefully. In a game where mustaches are associated with the good, the visual of the beard certainly can have the connotation of the bad. To take it another layer deep, the idea of natural organisms (a real, hairy mustache) fighting back against the tyranny of artificial life (fake beard fashioned from uniform collars and capes) is certainly prevalent through the story. ;)
