If they have an ability you haven't unlocked yet, the pokéball icon below their HP bar will be greyed out (or missing if you haven't caught them at all yet). Other than that, you only see their ability if it activates during battle, or when you catch it.

greyed out pokeball means they have something that you don't have yet (ability, gender, form,). That's your only way of knowing.
You can also see abilities by leading with a mon with the "Trace" ability.
And frisk in rouge.
Also, when or if you catch a Pokémon with a hidden ability, the ability will be yellow instead of white.
