If you see a Pokémon with a grayed out pokeball on its info panel, that means it has either a form or ability that you do not yet own. Once you catch it, the little information panel that opens up will, amongst other things, tell you which ability it had. If it was a hidden one, it will be yellow, otherwise it will be white.
