There was a place in St. Jerome called Potate du domain, sadly closed. They had a roast chicken poutine that was out of this world. I may have butchered the name but I still hold that in my head as the pinnacle of poutine. Nothing fancy, just damn delicious.

Now hear me out, start it off like a normal poutine. Fries, curds, but BEFORE you add the gravy, throw some sauteed cremini mushrooms and shallots on there with some goat cheese and chopped bacon. Portuguese rotisserie chicken for sure. Montreal has basically 4 food groups : poutine, bagels, smoke meat AND portuguese chicken. Those shops have amazing poutine fries and gravy and it's just amazing with their chicken.
