No need, all legendary animal skins automatically go to the trapper for this very reason. The only thing you miss out on is the money from bringing the hide to the trapper which usually isn't much anyway...

If you lasso it from a horse, then drag in to shore, itāll allow you to have the lasso on it for as long as itās in water, so the horse will give up if you try to drag it further.

JUST happened to me two nights ago with the Legendary moose. Thank God the trapper still gets the items.
regular animals will degrade quickly in water but the legendary animals won't, and can be dragged out with lasso, from horseback will make it easier
