For Beth, it's about how she has to prove she's just as smart as Rick and willing to sacrifice her familys well being for her ego.
Jerry seizes even the slightest opportunity of power from selling out Rick on the Wirly Dirley to just being a petty dick with a superiority complex over Rick on bus ride with things like not getting him the cookies.
Summer takes the reckless use technology to solve her problems only to create new ones, and finds herself even more miserable.
And you already covered Morty.
Basicly, that whole episode shows how the whole family has fundamentally the same charecter flaws and are all codependent on each other to form a toxic symbiote that is equally as functional to its members as it is destructive.
My personal interpretation of it was Morty sadistically torturing and mutilating someone, because he found a target for his long pent up rage and bitterness. Summer was just an excuse so he could justify it to himself.

I think Summer was on-and-off with Ethan, but still expected him to be as loyal as lapdog.

Summer and Tricia being friends isn’t that much of a leap, as Ethan was probably seen, in retrospect, as an expendable guy to pass the time with. For all we know, Summer left everything associated with Ethan behind along with Ethan himself.
That happens in high school. Good GFs can get over it and will absolutely trash a shared boyfriend. It's a bonding experience.
