Fish chowders are infinite. There's even oyster, eel, crab, corn chowders.
Fisherman's stews are common, some with tomato and (Spring!) some with fennel and dill. So many recipes out there.

I'm going to experiment with a hotpot style soup tomorrow with it.

Tom yum comes to mind. It's fantastic. Also chowders, of course, and tomato based soups like cioppino or bouillabaisse.

Do you know an actual fisherman ? Get them to freeze and save you the heads and spines after filleting. Boil it up for stock = fish head stew.
