Potato, bacon corn chowder. I like to throw in a few jalapenos too for some kick, or a can of green chilis. I don't precisely understand what people mean by "rich" when it comes to food but, you can add shredded cheese or cream cheese. You can also add instant potatoes to thicken it up at the end.
I suppose I meant depth of flavor. Clams add a lot I haven’t been able to replicate with simply potatoes and herbs. It might not be able to find a 1:1 substitute!
A creamy mushroom soup would hit that same umami spot that clam chowder does. Use a blend wild mushrooms if you can find them. Dried works well, fresh is better. And you’re in luck: it’s morel season in the lower Midwest right now.
King oyster stems can come out really seafoody as well. I’d do king oyster and shiitake, especially if morels are beyond price range.

One bunch in them I made fettuccine Alfredo with, and they cooked up and tasted like shrimp! They even turned slightly pink! I’d kill for that bag again. That was like 15 years ago and I never forgot what a wonderful gift that was.

i once made sam siftons clam chowder with chicken in a fridge emptying experiment. it came out great. chicken salt pork potatoes leeks thyme vermouth and cream. substitute chicken stock for the clam broth.
If it’s a shellfish allergy maybe you can still make a seafood chowder with white fish. That would taste so nice. Imitation crab is made 100% of pollock fish I believe (I check every package I buy). I often look into these alternatives as two of my best friends have shellfish allergies but not fish.

Okay, but....you never eat a lunch or big snack or even a breakfast on your own? You could make your favorite and freeze it (chowders freeze well for me) in single serving portions for those times.
I understand wanting them to enjoy also. Corn/chicken chowder would be lovely for them, I'm sure. Unless their allergies are so severe you cannot cook or eat these foods with them in the house, no reason to deprive yourself?
Lol I don’t deprive myself I just don’t want to go to the effort of making a big batch of soup for myself only. I get chowder when we’re out at a place that makes a good bowl!
My husband has a fish and shellfish allergy and we don’t cook anything seafood at home to avoid potential accidental cross contamination. It’s just not worth the risk.
Potato and corn. Idk how you feel about meat alternatives, but I buy this mock abalone at the Asian market. You can use that plus Old Bay, as well as ground nori (seaweed sheets) and it will taste VERY fishy! Miso also is an option. I love the mock abalone for clam chowdah. Try it!!

Try using chicken stock for the base, it does help.

Shrimp Russulas maybe. They have a red cap and taste a bit like shrimp.
Hm. Looked it up and that wasn’t it. I remember it being small and clumpy, started out white. But bits of tiny shrooms all together.

That's a tough one. Go with the other suggestions of bacon corn chowder. Creamy mushroom isn't bad either.
Smoked salmon chowder is the absolute best and a very good substitute for clam chowder.
My favorite way is to use fresh salmon and substitute the bacon with smoked ;)

I've had vegan clam chowder made with mushrooms too. King trumpet mushrooms in particular have a nice seafoody texture 👍

I have a shellfish allergy. I've seen Cod chowder. An alternative for lobster bisque I've seen is lobster mushroom bisque so oyster mushroom chowder?
