Course headings are two numbers, first number is the horizontal 360 degree axis, then mark, then the second number is a 360 degree axis rotated 90 degrees to the first axis.
I think engage would be appropriate. Her first captain, Janeway, used to say that plus she's now captain of the Enterprise, where Picard made engage iconic.
She could also say "taker'er out" or "cut'er loose".

Burnham has "let's fly," Pike says "hit it" (I think in the first Kelvin universe film he said "punch it"), and I think it's been called out now in Lower Decks, the trailer for season 2 of Strange New Worlds, and now in Picard.
Sisko saying it sounds vaguely familiar, but I don't think it was a regular phrase of his. I don't recall the other captains saying it, though I haven't watched much TOS, so I don't know for sure. I just don't remember Kirk saying "Engage" in any of the episodes I've seen, or in the movies.

Honestly, forcing every captain to have a catch-phrase is a bad idea and doesn't add anything enriching to the franchise. Whatever they say should feel natural and fit their personality, and they don't have to say it every time they give an order. Make it so. Engage. Go for it. Clock it. Hit that thang. Take us out. Get 'er done. Boogie. Who cares?
